4 Chicken Breasts, boneless cut in half
1 winter squash cut into cubes
1 zucchini cut into cubes
2 large sweet potatoes cut into cubes
4 medium slides carrots
2 stalks of celery chopped
1 onion chopped
salt and pepper
1 cup of apple juice or cider (even better).
The best way to do this is to do all your chopping the night before you want to make this dish and stick them all in a bowl together in the frig. In the morning throw the veggies into the crock pot and put the pieces of chicken on top and then pour in the apple juice (I like to grab some of those onions and celery and spread them on top of the chicken to add flavor to the meat but that is entirely optional). Cook covered on low for about six or seven hours.
