Puffy Omelette

A quick, cheap nutritious meal! And its the most simple thing to make.  Eggs are pretty cheap right now too. So you pop in some veggies you happen to have.  You will need a pan that can go in the oven.  I happen to use my cast iron one  


Puffy Omelette

2 Tablespoons Olive Oil
Creole seasoning to taste
2 Tablespoons Chopped Pepper
2 Tablespoons Chopped Onion
4 Cherry Tomatoes Chopped
20 spinach leaves, washed
3 Eggs Beaten
2 Tablespoons Milk
2 Ounces of cheese chopped

Preheat Oven to 350 degrees. Using medium high heat setting warm olive oil in pan, add chopped onion and pepper, saute until translucent. Add in cherry tomatoes and spinach, saute until the spinach has wilted. Beat eggs and season with Creole seasoning, pour into pan. Add cheese on top. Bake at 350 degrees for approximately 10-15 minutes. Omelette should be puffed up and golden brown on top.

    1. It’s really an awesome little meal. My favorite combination is in the summer when we have summer squash and zucchini to go in there!
