Cheesy Ham Hash Brown Casserole

 

We are having a Ham at Christmas dinner and yes I will be using the scraps for this dish!  It really is yummy.  You can freeze the leftover ham in cubes for this dish.  I’d just leave them in the refrigerator to thaw the day before.  I am so into USING it all UP!

 

(I actually changed this recipe slightly from when I made the video because I felt as though it was a little salty for my taste. I have suggested low sodium soup and added in half a cup of milk to dilute it a bit.)

 

Cheesy Ham Hash Brown Casserole

1 bag of frozen hash browns (30 ounces)
16 ounces sour cream
1 can of low sodium cream of chicken soup
1/2 cup of milk
1 small onion chopped small
2-3 cups of cubed ham (about one pound)
2 cups of cheddar cheese ( set aside one cup for topping

Preheat Oven to 350 degrees. Mix all the ingredients reserving 1 cup of the cheddar cheese for the top, Sprinkle the cheese on the top. Baked for 45 to 60 minutes. Cool for a few minutes before serving!

You can do this ahead and leave it in the refrigerator to pop in the oven when you get home. You can freeze this as well .
