Grown-Up Grilled Cheese

First of all, I cannot tell you how very much I love my grill, griddle, panini press thingy we bought a few years now. Best ever invention for making something quickly and easily. We make pancakes, french toast, grilled cheese, grilled chicken, hamburgers and all the rest on this thing. If I pound out a chicken breast I can cook it in six or seven minutes…….remarkable!


Today though I am just doing a grilled cheese for lunch. I work from home so I can just pop downstairs from my office, throw this thing in and have a tasty little lunch. First I sliced some red pepper and onion very thin. And then I sliced some cheese off a block of cheddar I had.  I always have cheddar cheese…one of those staples I just keep around.


I buttered my bread, stuck it on the press and piled on my goodies.


And then grilled it!


That is my version of the grown-up grilled cheese.
