Cherry Cheese Pie

Love making this dessert! It really does impress when you bring it to a party and it’s the simplest thing to make.  In my tutorial I make my own graham cracker crumb crust but you can certainly buy one.  The one part of my budget that I can control more than any other is my grocery bill.  I stock up on things like sweetened condensed milk when it’s on sale.  Then I wait for the cream cheese to go on sale and you can absolutely buy store brand cream cheese and save even more.

 

 

Cracker Crumb Crust

1 1/4 Graham Cracker Crumbs

1/4 Cup Sugar

1/3 Cup Butter

 

Filling

8 ounces Cream Cheese, softened

1 14 oz Can of Sweetened Condensed Milk

1 Tablespoon Vanilla

1/3 cup Lemon Juice

1 Can Cherry Pie Filling

 

You will need to make this about four hours before you plan to serve it. It is a good idea to take the cream cheese out of the refrigerator the night before so it will be soft.

To Make The Crust

Preheat oven to 350 degrees.
Mix the graham cracker crumbs, sugar and butter until thoroughly combined. Press the mixture into a nine inch pie pan.
Bake for ten minutes, remove from oven and cool completely before adding filling.

To Make the Filling

Combine Cream Cheese and the sweetened condensed milk, mix thoroughly, add in the vanilla and combine.  Add in the lemon juice.  Mix in mixer until creamy.  Pour filling into the pie crust.  Add canned cherries on top.  Refrigerate at least three hours before serving.
